Vanilla marshamallow biscuit recipe
COOKIE DOUGH
Ingredients:
- 200g flour
- 80g icing sugar
- 90g softened butter
- 1 egg
- 1 tsp liquid vanilla flavouring ScrapCooking®
MARSHMALLOW FILLING
Ingredients:
- 1 egg white
- 50g icing sugar
- 30g glucose syrup
- 1 tablespoon vanilla flavouring
DECORATION
PREPARATION
Step 1
In a mixing bowl, combine the flour, icing sugar and vanilla flavouring.
Form a well and add the egg and softened butter.
Mix by hand until a smooth dough forms.
Step 2
Wrap the dough in cling film and refrigerate for 2 hours.
Preheat the oven to 180°C (356°F).
Step 3
Roll out the dough and cut it using a cookie cutter.
Bake for 10 to 12 minutes.
MARSHMALLOW FILLING
Start by whisking the egg white with the icing sugar.
Add the slightly warmed glucose syrup and continue whisking until stiff peaks form.
Once the cookies are completely cooled, fill them with the marshmallow cream.
DECORATION
Decorate with ScrapCooking® sugar paste according to your inspiration.
